The full roast: chicken, pigs in blankets, honey-glazed carrots, sprouts, cauliflower cheese, roast potatoes and stuffing, all under a proper gravy.

Ingredients

  • 1 whole chicken

  • Pigs in blankets (chipolatas wrapped in bacon)

  • Carrots, cut into batons

  • Honey

  • Brussels sprouts

  • Cauliflower

  • Cheese sauce (cheddar, flour, butter, milk)

  • Potatoes, for roasting

  • Stuffing mix

  • Red cabbage

  • Gravy (stock, flour, pan juices)

Directions

  • Roast the chicken low and slow, basting occasionally, until the skin is golden and the juices run clear.
  • Parboil the potatoes, rough them up, then roast in hot fat until crisp and golden, turning halfway.
  • Toss the carrots in honey and roast until caramelised. Roast the pigs in blankets alongside until crisp.
  • Boil the sprouts and cauliflower until just tender. Top the cauliflower with cheese sauce and finish under the grill until bubbling.
  • Make the stuffing according to the pack, and braise the red cabbage.
  • Rest the chicken, then make a gravy from the roasting juices.
  • Carve the chicken and serve everything together, with gravy poured over.
