Seared tuna steak over fried rice with peas and broad beans, served with kimchi and a quick cucumber salad.

Ingredients

  • 2 yellowfin tuna steaks

  • Cooked brown rice

  • Frozen peas

  • Frozen broad beans

  • Kimchi, to serve

  • 1 cucumber, diced

  • Light soy sauce

  • Sesame seeds

  • Juice of 1 lemon

Directions

  • Toss the diced cucumber with a splash of soy sauce and set aside as a quick pickle-style salad.
  • Fry the cooked rice with the peas and broad beans until heated through.
  • Season the tuna steaks and sear hard and fast in a very hot pan, a minute or two per side, so the centre stays pink.
  • Slice the tuna and serve over the rice with the cucumber salad and a generous spoonful of kimchi on the side, scattered with sesame seeds.
